BROOKLIN -- There's a certain feeling that Lexi Fitzpatrick experiences every time she helps somebody new. While she can't quite describe the feeling, it's the same one the 12 year old from Brooklin has been chasing since she helped a stranger carry a buggy down a set of stairs at her school, four years ago. "When I got home that day, I felt this really amazing feeling inside for helping her and my mom said that was called true joy," says Lexi, who's nominated for a 2011 Ontario Junior Citizen of the Year award. While only seven years old at the time, Lexi immediately began brainstorming more ways to help people. Taking the cold temperatures of that winter into consideration, she decided to launch a blanket drive for those in need. Lexi sent letters to every house in her neighbourhood requesting donations of blankets that she could deliver to shelters across the GTA.

NOTE~ Since I used a turkey I made soup in a huge stock pot but when I do a regular size chicken soup I use a large stock pot. {I will share measurements for a large stock pot which I make regular chicken soup in.} Don't be afraid to make a large pot because you can put half in the freezer for later when you are sick or need a quick dinner! You will thank yourself later. 4. Once soup has simmered as long as you want then take turkey/chicken out and get meat off the bones. Use a strainer spoon to sift out any bones or skin left in the pot and discard. Take out whole onion, celery, carrot. {At this point you have chicken stock (if strained) if you want to save it for just that and not make soup.} I am sick @ home with a froggy sounding vce. Have slept all day & opened up a can of Campbell's chkn noodle soup. I made homemade last wk & alas , all gone now. Too sick to go shopping too. When i make mine i use chicken broth instead of water....
